Finding the time to cook a meal from scratch can be extremely challenging when you're trying to juggle work and a family at the same time, but I think it is important to feed my family healthy home cooked meals.
That's why my husband and I are trying our best to create a menu of evening meals that not only will satisfy a healthy eating regime but also cost as little as possible and not take hours to prepare and cook. I know that's a lot of conditions to put on a meal but we only get one life so we might as well live a healthy one.
I really like eating quiches but feel that the store bought ones taste a little manufactured and as I want to avoid store bought ready meals then I decided to make one myself this time. I've never made a quiche before in my life so when I found this recipe, I wanted to try it out because it seemed simple enough and relatively low cost. It combines two of my favourite things; vegetables and fish so all I had left to do was plan it into my meal planner and crack on.
The recipe
400g broccoli
200g smoked salmon
6-8 sheets of puff pastry
3 eggs
1 tbsp mustard
200ml cream
Salt & Pepper
Instructions
Cook the broccoli and then drain off the water. Lay the puff pastry in a baking tin/dish and press the sheets together to form the base of the quiche. Use a fork to puncture a few holes in the bottom of the pastry. Warm the oven to 200 degrees C (180 degrees - fan assisted). Whilst the oven is warming up, mix together the eggs, cream and mustard in a bowl and add a pinch of salt and pepper to taste. Spread the broccoli and salmon in the tin/dish. I used two baking tins as they were quite shallow but one should be fine if it's deeper. Pour the egg mixture over the salmon and broccoli. Bake in the oven for about 30 minutes.
There are two things that I would do differently...
- Greasing the baking tin beforehand would have made it easier to serve as some of the pastry stuck to the bottom.
- I would like to make my own puff pastry instead of using the store bought ones. I've read up on making it myself and it looks pretty hard but I will definitely get around to trying it one of these days.
