When you're trying to live a happier, healthier life I think it's extremely important to treat yourself from time to time. That's why we decided that if we're going to have a dessert, then we'd only have one during the weekends. This doesn't mean that we pig out on loads of bad stuff after dinner, but more like we make our own desserts when we fancy it. When you make something yourself you know exactly what you're putting into it and therefore cut out most (if not all) of the preservatives and unexpected additives that food manufacturers add into the desserts you can buy ready done.
I really love baking but don't get to do it very often nowadays so I was determined to set aside some time and bake some blueberry muffins. I called them "Bursting blueberry muffins" in the title because on some of them it seemed that the blueberries erupted in the oven and burst out of their muffin prisons to freedom ;)
It's a really simple recipe that doesn't require special ingredients so any well supplied home baker should be able to knock a batch of these out in no time at all (well, in about 20 minutes anyway!).
The recipe
185g Plain flour
1 tbsp Baking powder
180g Unsalted butter
150g Sugar
3 Eggs (beaten)
1 tsp Vanilla essence
2 tbsp Milk
2 handfuls Fresh blueberries
1. Warm the oven to 190°C (170°C fan-assisted). Place 12 muffin cups into a muffin baking tray.
2. Sieve the flour and baking powder into a mixing bowl and then add the butter, eggs, sugar, vanilla essence and milk. Mix together until you have a smooth mixture. Then add the blueberries and mix some more.
3. Pour mixture into the muffin cups and bake for approximately 15 minutes or until golden. Let the muffins cool down on a cooling rack.
Once cooled, enjoy either on their own or with a nice cool glass of milk. Trust me, it's nice!
