I am on a mission to find healthy meals to feed the family, which can appear like a tall order sometimes. Fortunately there are loads of recipes around at the moment and everyone seems to be concentrating on these two key factors; healthy and cheap.
I think it's extremely important that you can feed your family properly without it costing lots of money. I looked for some ideas and adapted this recipe and gave it my own personal touch.
Ingredients (based on a family of 4):
Rice, 420g
Chicken, 400g
Broccoli
Bell peppers, green and yellow
Bacon bits, 100g
Onion, small
Sweetcorn, 300g
Cook the rice according to the package instructions. Heat some oil in a frying pan, add the broccoli and peppers and cook until they are almost soft. Take them out of the pan and place them in a covered bowl. Cook the onion, chicken and bacon bits in the pan. Use salt and pepper as needed. Then add in the broccoli, bell peppers and sweet corn. Cook for a further 5 minutes. Serve with the rice and enjoy.
This simple recipe is quick and easy which makes it perfect for throwing together when you haven't got a lot of time to cook.
